Start by soaking the glutinous rice flour in warm water gradually, kneading into a smooth, non-sticky dough. Let it rest for 15 minutes. Meanwhile, stuff each pitted date with a small piece of walnut or mashed red bean paste for a surprise filling.

Take a dough portion (about the size of a date), flatten it, wrap a date inside, and roll into a ball. Ensure no cracks remain to prevent leaking.
