Braised pork with carrot is a comforting Chinese dish, balancing tender meat, sweet carrots, and a savory sauce. Here’s a simple recipe to recreate it at home.
Ingredients: 500g pork belly (cut into 2cm cubes), 2 carrots (peeled and sliced), 3 tbsp soy sauce, 2 tbsp dark soy sauce, 1 tbsp sugar, 1 tbsp Shaoxing wine, 1 star anise, 1 cinnamon stick, 3 slices ginger, 2 cloves garlic, and cooking oil.
Steps:
1. Prepare the pork: Boil pork in boiling water for 3 minutes to remove impurities. Drain and rinse.
2. Sear the meat: Heat oil in a wok. Add pork and stir-fry until golden brown. Add ginger, garlic, star anise, and cinnamon, stirring until fragrant.
3. Simmer: Pour in Shaoxing wine, soy sauce, and dark soy sauce. Add sugar and enough water to cover the pork. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Add carrots: Place carrot slices on top of the pork. Cover and simmer for another 15–20 minutes until carrots are tender and the sauce thickens.
5. Finish: Adjust seasoning if needed. Serve hot with steamed rice.
This dish pairs melt-in-your-mouth pork with naturally sweet carrots, all coated in a rich, umami-rich sauce. Enjoy this hearty meal with family!
