Shiitake sausage claypot rice is a comforting, one-pot dish that combines savory flavors and aromatic textures. Here’s a simple guide to making it at home.
Ingredients: 2 cups rice, 150g shiitake mushrooms (sliced), 100g Chinese sausage (lap cheong, sliced), 3 cloves garlic (minced), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, 2 tbsp cooking oil, and chopped green onions for garnish.
Steps:
1. Prep: Soak shiitake mushrooms in warm water for 20 minutes until soft, then slice. Dice sausage into thin pieces.
2. Sauté: Heat oil in a claypot or heavy-bottomed pot. Sauté garlic until fragrant, then add mushrooms and sausage. Stir-fry for 2–3 minutes to release oils.
3. Combine: Rinse rice and drain. Add rice to the pot, stirring to coat with oil and aromatics. Pour in 2.5 cups water (or 1:1.5 rice-to-water ratio).
4. Season: Mix soy sauce, oyster sauce, and sesame oil. Pour over the rice. Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes until rice is tender and liquid is absorbed.
5. Finish: Turn off heat and let it rest for 5 minutes. Garnish with green onions and a drizzle of sesame oil.
Tip: For a crispy crust, increase heat to high for 1 minute at the end before resting. Serve hot and enjoy the umami-rich flavors!
