Classic Peanut Nougat Recipe

Making authentic peanut nougat at home is simple and rewarding, requiring just a few key ingredients. Here’s a step-by-step guide to achieve the perfect chewy, nutty treat.

### Ingredients

- 200g granulated sugar

- 50g honey

- 100g water

- 2 large egg whites (room temperature)

- 150g roasted peanuts (unsalted, roughly chopped)

- 30g unsalted butter (softened)

- 1 tsp vanilla extract

### Instructions

1. Prepare the Base: Line a 20x20cm square tin with parchment paper. Chop peanuts and set aside.

2. Make the Sugar Syrup: In a saucepan, combine sugar, honey, and water. Heat over medium-high, stirring until sugar dissolves. Bring to a boil (120–125°C on a candy thermometer) without stirring.

3. Whip Egg Whites: While the syrup cooks, beat egg whites with an electric mixer until stiff peaks form.

4. Combine Syrup and Whites: Carefully pour the hot syrup in a thin stream into the whipped whites, beating continuously on medium-high speed until the mixture thickens and cools (about 10–15 minutes). It should hold its shape.

5. Add Flavorings: Reduce mixer speed to low. Add softened butter and vanilla extract, mixing until fully incorporated. Fold in chopped peanuts gently.

6. Set and Cut: Pour the mixture into the prepared tin, smoothing the top. Let it set at room temperature for 4–6 hours, or overnight. Once firm, lift out of the tin, peel off parchment, and cut into small squares.

### Tips

- Use a candy thermometer for precise syrup temperature to avoid a grainy texture.

- Store nougat in an airtight container at room temperature for up to 2 weeks.
