Mihua Tang, a crispy, sweet snack loved in China, is surprisingly easy to make at home. Here’s a basic recipe to get you started.
First, gather your ingredients: 200g puffed rice, 150g sugar, 50g maltose (or honey), 30g peanuts (roasted and crushed), and 1 tbsp water. A non-stick pan and mold are essential.
Start by heating the sugar and water in the pan over medium-low heat. Stir gently until the sugar melts completely, then bring to a boil. Reduce heat and simmer for 5–7 minutes until the mixture thickens slightly—test by dropping a bit into cold water; if it hardens, it’s ready.
Remove from heat and quickly stir in the maltose until smooth. Add the crushed peanuts and puffed rice, mixing rapidly to coat every grain. Work fast, as the mixture hardens as it cools.
Immediately transfer the sticky mixture to a pre-oiled mold or a flat surface. Press down firmly with a rolling pin to compact it. Let it cool for 10–15 minutes until set, then cut into small squares or bars.
