How to Make Perfect Salt and Pepper Shrimp

Salt and pepper shrimp is a beloved Asian dish, celebrated for its crispy texture, savory aroma, and zesty kick. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients:

- 500g large shrimp, peeled and deveined (tails left on for presentation)

- 2 tbsp cornstarch

- 1 tbsp all-purpose flour

- 1 tsp baking powder (optional, for extra crispiness)

- ½ tsp salt (adjust to taste)

- ¼ tsp black pepper

- Oil for deep-frying

For the Salt and Pepper Seasoning:

- 3 tbsp sea salt

- 1 tbsp black pepper

- 1 tsp sugar (balances the saltiness)

- 2 cloves garlic, minced

- 1 red chili, thinly sliced (optional, for heat)

- 2 spring onions, chopped

Instructions:

1. Prepare the Shrimp: Pat shrimp dry with paper towels. In a bowl, mix cornstarch, flour, baking powder, salt, and pepper. Toss shrimp in the mixture until evenly coated.

2. Deep-Fry: Heat oil to 180°C (350°F). Fry shrimp in batches for 2-3 minutes until golden and crispy. Drain on a wire rack.

3. Make the Seasoning: In a dry pan, toast sea salt, black pepper, and sugar over medium heat for 1 minute. Add garlic, chili, and spring onions; stir for 30 seconds until fragrant.

4. Combine: Toss fried shrimp with the seasoning mix. Serve hot with lemon wedges.

Tip: For a healthier version, air-fry shrimp at 200°C (400°F) for 10-12 minutes, flipping halfway. Enjoy this crispy, flavorful dish as an appetizer or main course!
