How to Make Stir-Fried Onion and Lamb

Stir-fried onion and lamb is a quick, flavorful dish that balances tender meat with sweet, caramelized onions. Here’s a simple guide to making it perfectly.

Ingredients:

500g lamb loin, sliced thinly against the grain; 2 large onions, cut into wedges; 3 cloves garlic, minced; 1 tbsp ginger, grated; 2 tbsp soy sauce; 1 tbsp oyster sauce; 1 tsp sugar; 1/2 tsp black pepper; 2 tbsp cooking oil; Optional: 1 tsp chili flakes for heat.

Steps:

1. Marinate the lamb: In a bowl, mix lamb with soy sauce (1 tbsp), oyster sauce, sugar, black pepper, and half the garlic and ginger. Let it sit for 15–20 minutes to tenderize.

2. Sear the lamb: Heat oil in a wok or large skillet over high heat. Stir-fry lamb for 2–3 minutes until browned. Remove and set aside.

3. Cook the onions: In the same pan, add a little more oil if needed. Sauté onions until soft and slightly caramelized (5–7 minutes). Add remaining garlic and ginger; cook for 30 seconds until fragrant.

4. Combine and season: Return lamb to the pan. Toss with onions, adding the rest of the soy sauce. Stir-fry for 1–2 minutes until everything is heated through. Adjust seasoning if needed.

5. Serve: Garnish with sesame seeds or chopped green onions. Enjoy hot with rice or noodles!
