Spicy Potato Noodles: A Culinary Guide

Spicy potato noodles, a beloved street food favorite, combine chewy noodles, tender potatoes, and a fiery broth for an unforgettable meal. Here’s a simple yet delicious recipe to recreate this dish at home.

Ingredients:

200g potato noodles (dried or fresh), 1 large potato (sliced into thin strips), 100g beef or tofu (sliced), 2 tbsp chili oil, 1 tbsp soy sauce, 1 tsp Sichuan peppercorn powder, garlic, ginger, scallions, and vegetable broth.

Steps:

1. Prepare the Broth: Heat 2 tbsp oil in a pot, sauté minced garlic and ginger until fragrant. Add chili oil, Sichuan peppercorn powder, and 500ml vegetable broth. Simmer for 5 minutes, then season with soy sauce.

2. Cook the Noodles & Potatoes: Boil the potato noodles until al dente (3-5 mins). In a separate pan, fry the potato strips until golden. Set both aside.

3. Assemble: Stir-fry beef/tofu until cooked. Add the noodles, potato strips, and broth to the pan. Simmer for 2 minutes, letting the flavors meld.

4. Serve: Garnish with scallions and a sprinkle of chili flakes. For extra spice, add more chili oil!
