Hearty Beef, Potato, and Tomato Stew: A Step-by-Step Guide

This comforting one-pot stew combines tender beef, creamy potatoes, and savory tomatoes in a rich, flavorful broth. Perfect for chilly days, it’s easy to make and sure to please the whole family. Here’s how to prepare it:

Ingredients:

- 500g beef chuck, cubed

- 4 potatoes, peeled and diced

- 3 large tomatoes, chopped (or 1 can diced tomatoes)

- 1 onion, finely chopped

- 2 carrots, sliced

- 3 garlic cloves, minced

- 2 tbsp tomato paste

- 1 tsp dried thyme

- 1 bay leaf

- 2 cups beef broth

- 2 tbsp olive oil

- Salt and pepper to taste

Instructions:

1. Sear the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.

2. Sauté Aromatics: In the same pot, add onion, carrots, and garlic. Cook until softened (5 minutes). Stir in tomato paste and cook for 1 minute.

3. Simmer: Return beef to the pot. Add tomatoes, potatoes, thyme, bay leaf, and beef broth. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours, or until beef is tender.

4. Season and Serve: Discard the bay leaf. Adjust seasoning with salt and pepper. Serve hot, garnished with fresh parsley.

Tips: For extra richness, add a splash of red wine with the broth. For a thicker stew, mash some potatoes against the pot walls before serving. Enjoy this hearty meal with crusty bread!
