Ingredients: Makes 8 bagels
- 500g high-gluten flour
- 300ml lukewarm water
- 7g active dry yeast
- 15g sugar
- 10g salt
- 2 tbsp malt powder (or brown sugar)
- 1 large egg white (for wash)

Method:
1. Activate Yeast: Dissolve yeast and sugar in lukewarm water; let sit for 5-10 minutes until frothy.
