The Ultimate Guide to Making Authentic Bagels

Authentic bagels are a labor of love, prized for their chewy texture, shiny crust, and depth of flavor. Follow this step-by-step guide to master the classic at home.

Ingredients: Makes 8 bagels

- 500g high-gluten flour

- 300ml lukewarm water

- 7g active dry yeast

- 15g sugar

- 10g salt

- 2 tbsp malt powder (or brown sugar)

- 1 large egg white (for wash)

- Optional toppings: sesame, poppy seeds, dried onions

Method:

1. Activate Yeast: Dissolve yeast and sugar in lukewarm water; let sit for 5-10 minutes until frothy.

2. Mix Dough: In a large bowl, combine flour, malt powder, and salt. Pour in yeast mixture and knead for 10-15 minutes until smooth and elastic.

3. First Rise: Place dough in an oiled bowl, cover, and let rise for 1-2 hours until doubled.

4. Shape: Divide dough into 8 pieces. Roll each into a 25cm rope, wrap ends around to form a circle, and pinch to seal.

5. Second Rise: Cover shaped bagels and let rest for 20 minutes.

6. Boil: Preheat oven to 220°C. Bring a large pot of water to a simmer with 1 tbsp sugar. Boil bagels 2-3 minutes per side.

7. Bake: Brush with egg white, add toppings, and bake for 20-25 minutes until golden brown.

Cool completely for the best chew. Enjoy plain or with your favorite toppings!
