Spicy tofu skin (mala doupi) is a beloved Chinese snack, loved for its chewy texture and fiery, numbing flavor. Here’s a simple guide to making it at home.
Ingredients: Dried tofu skin, Sichuan peppercorns, dried chili peppers, soy sauce, vinegar, sugar, garlic, ginger, sesame oil, and peanuts (optional).
Steps:
1. Prep the tofu skin: Soak dried tofu sheets in warm water for 10-15 minutes until soft. Drain and cut into strips.
2. Make the sauce: Heat 2 tbsp oil in a pan. Fry Sichuan peppercorns and dried chilies until fragrant. Add minced garlic and ginger, stir-fry for 30 seconds. Mix in 1 tbsp soy sauce, 1 tsp vinegar, 1 tsp sugar, and 100ml water. Simmer for 2 minutes.
3. Combine: Tofu skin strips into the sauce, cook on medium heat for 5 minutes, stirring gently to coat evenly.
4. Finish: Turn off the heat, drizzle with sesame oil, and sprinkle crushed peanuts and sesame seeds. Let it cool for better flavor absorption.
Serving: Enjoy it as a snack or side dish. For extra crunch, add fried tofu puffs. Adjust spice levels by reducing chilies or adding sugar to balance the heat.
This dish is versatile—try adding vegetables or protein like chicken for a heartier meal. With its bold flavors and satisfying chew, spicy tofu skin is sure to become a favorite!
