How to Make Mango Pudding (Mango Xiao Wan Zi)

Mango pudding, or "Mango Xiao Wan Zi," is a beloved dessert loved for its creamy texture and refreshing mango flavor. Here’s a simple guide to making it at home.

Ingredients:

- 2 ripe mangoes (fresh or frozen), peeled and cubed

- 200ml coconut milk

- 300ml fresh milk

- 3 tablespoons sugar (adjust to taste)

- 2 gelatin sheets (or 1 teaspoon powdered gelatin)

- Optional: A splash of vanilla extract for extra fragrance.

Steps:

1. Prepare the gelatin: Soak gelatin sheets in cold water for 5 minutes until soft. If using powdered gelatin, dissolve it in 2 tablespoons of warm water.

2. Blend the mango: In a blender, combine mango cubes, coconut milk, fresh milk, and sugar. Blend until smooth.

3. Mix in gelatin: Gently heat the mango mixture in a saucepan over low heat (do not boil). Add the softened gelatin and stir until fully dissolved. Remove from heat.

4. Strain and chill: Strain the mixture through a fine mesh sieve to remove any lumps. Pour into small pudding molds or glasses.

5. Set: Refrigerate for at least 4 hours, or until firm. For a smoother top, cover with plastic wrap.
