How to Make Chive and Shrimp Omelet: A Simple Recipe

Chive and shrimp omelet is a quick, delicious, and nutritious dish loved for its fresh flavors and soft texture. Here’s a step-by-step guide to making it perfectly.

Ingredients:

- 200g fresh chives, washed and chopped

- 100g dried shrimp, soaked and finely chopped

- 3 large eggs, beaten

- 1 tbsp soy sauce

- ½ tsp white pepper

- 2 tbsp cooking oil

- Salt to taste

Instructions:

1. Prep the ingredients: Soak dried shrimp in warm water for 10 minutes, then drain and chop. Wash chives, pat dry, and chop into 1cm pieces. Beat eggs in a bowl, add soy sauce, white pepper, and a pinch of salt; mix well.

2. Cook the filling: Heat 1 tbsp oil in a wok over medium heat. Sauté chopped shrimp until fragrant (about 1 minute), then add chives. Stir-fry for 2–3 minutes until chives soften slightly. Remove from the wok and let cool.

3. Combine and cook: Return the wok to heat, add the remaining oil. Pour in the beaten egg mixture. As the eggs start to set, add the shrimp-chive mixture evenly over one half. Fold the other half over to form a half-moon shape.

4. Finish and serve: Cook for another 1–2 minutes until the eggs are fully set but still tender. Slide onto a plate, cut into portions, and serve hot with rice.
