How to Make Taiwanese Scallion Pancake (Shou Zhu Bing)

Taiwanese scallion pancake, or *Shou Zhu Bing*, is a beloved street food known for its crispy, flaky layers and savory flavor. Here’s a simple guide to making it at home.

Ingredients:

- 2 cups all-purpose flour

- ¾ cup warm water

- 1 tsp salt

- 3 tbsp cooking oil

- ½ cup chopped scallions

- Optional: sesame seeds, dried shrimp, or egg for extra flavor.

Steps:

1. Prepare the dough: Mix flour and salt, gradually add warm water, and knead into a smooth dough. Let it rest for 30 minutes.

2. Divide and flatten: Split the dough into 4 balls. Roll each into a thin rectangle, brush with oil, and sprinkle scallions.

3. Roll and coil: Tightly roll the rectangle into a log, coil it into a spiral, and press flat into a pancake.

4. Cook: Heat a pan over medium heat. Add oil, cook the pancake for 3–4 minutes per side until golden and crispy.

5. Serve: Cut into wedges and enjoy hot with soy sauce or chili sauce.
