Chao Fen, or stir-fried rice noodles, is a beloved Asian dish celebrated for its smoky aroma and tender texture. Here’s a simple yet authentic recipe to recreate it at home.
Ingredients: 200g rice noodles, 200g protein (e.g., shrimp, chicken, or tofu), 2 eggs, 2 cloves garlic (minced), 2 cups bean sprouts, 2 green onions (chopped), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp dark soy sauce, ½ tsp sugar, and 1 tbsp cooking oil.
Steps:
1. Prep the noodles: Soak rice noodles in warm water for 15-20 minutes until soft. Drain and set aside.
2. Cook protein: Heat oil in a wok over high heat. Stir-fry protein until cooked through, then remove.
3. Scramble eggs: Push protein to the side, crack eggs into the wok, and scramble until set. Mix with protein.
4. Stir-fry aromatics: Add garlic and stir-fry until fragrant (30 seconds). Toss in bean sprouts and cook for 1 minute.
5. Combine: Add noodles, sauces, and sugar. Toss vigorously for 2-3 minutes until noodles are coated and slightly charred.
6. Finish: Return protein to the wok, add green onions, and stir-fry for 30 seconds. Serve hot.
Tips: Use high heat for “wok hei” (smoky flavor). Customize with vegetables like bell peppers or carrots. Enjoy this quick, flavorful dish with a side of chili sauce!
