You Shuo Zi Bing, a savory and crunchy Chinese snack, is made from rendered pork fat, known for its rich aroma and flaky texture. Here’s a simple guide to making it at home.
Ingredients:
- 500g pork belly (with skin and fat layer)
- 1 tsp salt (adjust to taste)
- ½ tsp five-spice powder (optional, for extra flavor)
- Oil for deep-frying
Steps:
1. Prep the Pork: Cut pork belly into small 1-inch cubes. Rinse and pat dry thoroughly with paper towels—this ensures crispy results.
2. Render the Fat: Place pork in a cold, non-stick pan over low heat. Slowly cook for 20–30 minutes, stirring occasionally, until the fat melts and the pieces turn golden brown and crispy. Remove the crispy cracklings (you Shuo Zi) and set aside.
3. Make the Dough: In a bowl, mix 2 cups of flour, 1 tbsp salt, and the rendered pork fat (cooled but still soft). Knead into a smooth dough, adding water gradually if needed. Let it rest for 15 minutes.
4. Shape and Fry: Divide the dough into small balls. Roll each into a flat circle, wrap a spoonful of crispy you Shuo Zi inside, and seal the edges. Flatten slightly. Deep-fry in hot oil (170°C/340°F) until golden brown, about 2–3 minutes per side.
5. Serve: Drain on paper towels, sprinkle with salt or five-spice powder while warm. Enjoy as a snack or with congee!
Tip: For extra flavor, marinate the pork cubes with soy sauce and ginger before rendering. Store in an airtight container to maintain crispiness.
