Quinoa is free of acne and has a high protein content (between 10 and 17 per cent, even higher than wheat), so it tastes a little bit of chewing. But because seed particles are small, it is easy to feel soft. Fibres are also higher than average grains and contain a certain amount of fat (albeit unsaturated fatty acid), and overall nutrition appears to be between cereals and beans. Such an external view of rice-like grains with a very high nutritional content, low calorie and abdominal content, is a perfect substitute for starch.
