Steps for Mandarin fish in white sauce

1
Ingredients: Mandarin fish, rice bamboo, red pepper, peas, shredded ginger, shredded green onion seasoning: pepper powder, salt, chicken powder, sesame oil, cooking wine
2
The fish are slaughtered, cut off the gills and internal organs, and then washed. Use a knife to draw a flower knife on the thick part of the fish's back; remove the shells and dice; wash the red pepper and dice; shred the onions and ginger.
3
Pour water bamboo into clear water and boil to remove oxalic acid, and also add boiling water to blanch the peas.
4
After the pan is heated, add oil, heat the onions and ginger and stir-fry them until fragrant. Add the fish on both sides and fry it slightly, and add cooking wine to remove the fishy smell.
5
Add boiling water and a little salt to boil over high heat, turn to medium heat and cook until the fish eyes protrude and the soup becomes white.
6
Carefully remove the fish and plate it for later use.
7
Add the fish soup into the shredded spring onion and ginger, remove it, add diced rice bamboo, peas, and red pepper and cook for 2-3 minutes.
8
Season with salt, pepper, and chicken essence, and then collect the sauce over high heat. Stir thin with water starch and sprinkle with a little sesame oil.
9
Pour on the fish out of the pan, sprinkle with chopped green onion.
