How to Make Tomato Beef Noodle Soup

Tomato beef noodle soup is a beloved dish, blending tender beef, savory tomatoes, and chewy noodles in a rich broth. Here’s a simple guide to making it at home.

Step 1: Prepare the Ingredients

You’ll need 500g beef chuck (cut into 2cm cubes), 4 ripe tomatoes (blanched, peeled, and chopped), 1 onion (sliced), 3 garlic cloves (minced), 5cm ginger (sliced), 2 tablespoons cooking oil, 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sugar, salt to taste, and 200g fresh or dried noodles.

Step 2: Brown the Beef

Heat oil in a pot over medium-high heat. Sear the beef cubes until golden on all sides, then remove and set aside. This step enhances the flavor.

Step 3: Cook the Aromatics and Tomatoes

In the same pot, sauté onion, garlic, and ginger until fragrant. Add chopped tomatoes, cook until they soften and release juices, then mash slightly for a thicker sauce.

Step 4: Simmer the Beef

Return the beef to the pot. Add soy sauce, oyster sauce, sugar, and enough water to cover the beef. Bring to a boil, then reduce heat and simmer for 1.5–2 hours, or until the beef is tender.

Step 5: Cook the Noodles

Boil noodles according to package instructions until al dente. Drain and rinse with cold water.
