Ingredients:

- 500g fresh choy sum, washed and trimmed

- 4-5 garlic cloves, minced

- 1 tbsp cooking oil (vegetable or canola)

- 1 tsp soy sauce

- ½ tsp salt (or to taste)

- ½ tsp sugar (optional, to balance flavors)

- 1 tbsp water (for steaming)

Steps:

1. Prep the choy sum: Cut off the tough bottom ends of the choy sum. If the stems are thick, slice them lengthwise for even cooking. Pat dry to avoid splattering.

2. Heat the oil: In a wok or large skillet, heat oil over medium-high heat. Add minced garlic and stir-fry for 10-15 seconds until fragrant—do not let it brown, or it will turn bitter.

3. Stir-fry the choy sum: Add the choy sum to the wok. Toss continuously for 1-2 minutes until the leaves wilt slightly.

4. Season and steam: Pour in water, then add soy sauce, salt, and sugar. Stir well, cover, and let it steam for 1-2 minutes until the stems are tender-crisp.

5. Serve: Uncover, toss once more, and transfer to a plate. Enjoy hot with rice!
