How to Make Garlic Stir-Fred Red Amaranth

Red amaranth, a nutrient-rich leafy green, becomes irresistibly flavorful when stir-fried with garlic. Here’s a simple yet delicious method to prepare it.

Start by washing 500g of red amaranth thoroughly and trimming the roots. Blanch it in boiling water for 30 seconds to retain its vibrant color and tender texture, then drain and set aside. In a wok, heat 2 tablespoons of oil over medium heat. Add 4 minced garlic cloves and sauté until fragrant, being careful not to burn them.

Toss the blanched amaranth into the wok, stirring gently to coat it with the garlic-infused oil. Season with 1 teaspoon of soy sauce, a pinch of salt, and a dash of sesame oil for extra aroma. For a touch of sweetness, add ½ teaspoon of sugar. Stir-fry for 1–2 minutes until the greens are well combined with the seasonings.

Serve hot as a side dish. This dish pairs perfectly with steamed rice and offers a perfect balance of savory, garlicky flavors and a slight crunch. Enjoy this healthy and vibrant staple in just 15 minutes!
