Brown Sugar Red Date Chiffon Cake Recipe

Ingredients:

- 5 eggs (separated)

- 80g brown sugar

- 80g cake flour

- 60ml red date paste (blend soaked red dates with water)

- 40ml vegetable oil

- 1 tsp vanilla extract

- Pinch of salt

- 30g sugar (for egg whites)

Steps:

1. Prepare the batter: Whisk egg yolks, brown sugar, oil, red date paste, and vanilla until smooth. Sift in cake flour and fold gently until no lumps remain.

2. Whip egg whites: In a clean bowl, beat egg whites with salt until frothy. Gradually add 30g sugar, beating until stiff peaks form.

3. Combine: Gently fold 1/3 of the egg whites into the yolk mixture to lighten it, then fold in the remaining whites in two batches, maintaining airiness.

4. Bake: Pour the batter into a 17cm ungreased tube pan. Tap the pan to release air bubbles. Bake at 160°C (320°F) for 40-45 minutes, until a skewer comes out clean.

5. Cool: Invert the pan immediately and let cool completely before removing.

Tip: For extra flavor, soak red dates in hot water for 20 minutes before blending. Serve with a dusting of powdered sugar or a drizzle of red date syrup! Enjoy this moist, fragrant cake that’s both healthy and delicious.
