Three Freshness Spring Rolls, a classic Chinese dish, are loved for their crispy wrapper and fresh, flavorful filling. Here’s a simple guide to making them at home.
Ingredients: For the filling, you’ll need 100g each of shrimp, pork belly, and shredded cabbage (or bamboo shoots). Season with soy sauce, sesame oil, salt, and a pinch of white pepper. For the wrapper, use 20-25 spring roll wrappers (available in Asian markets). Optional: Serve with sweet chili sauce or tamarind dip.
Steps:
1. Prepare the filling: Shrimp finely chopped, pork belly diced and stir-fried until crispy, cabbage shredded and blanched (squeeze out excess water). Mix all ingredients with seasonings.
2. Wrap the rolls: Place a wrapper flat, add 1-2 tbsp filling near one corner. Fold the bottom corner over the filling, fold in both sides, then roll tightly into a cylinder. Seal the edge with a little water.
3. Fry to golden: Heat oil to 170°C (340°F). Deep-fry rolls in batches for 3-4 minutes until golden and crispy. Drain on paper towels.
Tips: Keep wrappers covered with a damp cloth to prevent drying. Adjust filling ingredients based on preference—some add carrots or mushrooms for extra color. Enjoy hot for the best texture! This versatile dish is perfect as an appetizer or snack, bringing a taste of spring to your table.
