Plum blossom dumplings, or *meihua jiao*, are a delicate Chinese dim sum treat named for their vibrant, flower-like shape. Here’s a simple guide to crafting these beauties at home.
### Ingredients
For the dough: 200g all-purpose flour, 80ml warm water, a pinch of salt.
For the filling: 150g ground pork (or shrimp), 2 chopped shiitake mushrooms, 1 tbsp soy sauce, 1 tsp sesame oil, salt, and white pepper to taste.
For garnish: A few goji berries or diced carrots.
### Steps
1. Make the dough: Mix flour and salt, gradually add warm water, and knead into a smooth ball. Rest for 30 minutes, then roll into a thin log and cut into 10 small pieces. Roll each into a circle (diameter ~8cm).
2. Prepare the filling: Combine pork, mushrooms, soy sauce, sesame oil, salt, and pepper. Stir until sticky.
3. Shape the dumplings: Place a tablespoon of filling in the center of each wrapper. Fold the dough into a half-moon, then pinch the edges to seal. Create five "petals" by gently pinching the outer edge every 1cm, forming a flower shape. Press a goji berry or carrot dice in the center.
4. Cook: Steam for 12-15 minutes over high heat until cooked through.
### Serving Tip
Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil. These dumplings are not only delicious but also a feast for the eyes, perfect for festive occasions or afternoon tea. Enjoy the blend of tender dough and savory filling in every bite!
