Ingredients:

- 2 cod fillets (about 500g),

- 3 tbsp soy sauce,

- 2 tbsp Shaoxing wine,

- 1 tbsp sugar,

- 1 sliced ginger,

- 2 minced garlic cloves,

- 1 green onion (chopped),

- 500ml water or stock,

- 1 tbsp oil.

Steps:

1. Prep the Cod: Pat the cod dry and score lightly to prevent curling. Lightly sear both sides in hot oil until golden, then set aside.
