How to Make Perfect Chocolate Madeleines

Chocolate Madeleines, those iconic shell-shaped French pastries with a tender, buttery crumb and rich chocolate flavor, are easier to bake than they look. Here’s a simple guide to crafting these delightful treats.

Ingredients: You’ll need 100g all-purpose flour, 50g cocoa powder, 2 eggs, 100g granulated sugar, 100g unsalted butter (melted and cooled), 1 tsp vanilla extract, a pinch of salt, and powdered sugar for dusting.

Steps:

1. Prep: Whisk eggs and sugar until thick and pale. Sift in flour, cocoa powder, and salt, then fold gently. Add melted butter and vanilla, mixing until just combined. Chill the batter for at least 1 hour (or overnight for deeper flavor).

2. Bake: Preheat the oven to 180°C (350°F). Grease and flour a Madeleine pan. Spoon batter into each shell, filling about ¾ full. Bake for 10–12 minutes until the edges are golden and the centers spring back when touched.

3. Serve: Let cool slightly, then dust with powdered sugar. Enjoy warm with a cup of coffee or tea.

Tips: For a glossy finish, brush the tops with melted butter halfway through baking. Experiment with dark, milk, or white chocolate for varied richness. These delicate pastries are best eaten the same day for optimal texture.
