Ingredients:

1 whole duck (cut into 2-inch pieces), 3 tbsp soy sauce, 2 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tbsp sugar, 1-inch ginger (sliced), 3 cloves garlic (smashed), 1 star anise, 2 dried chili peppers (optional), and enough water to cover the duck.

Steps:

1. Prepare the duck: Rinse the duck pieces and blanch them in boiling water for 5 minutes to remove impurities. Drain and set aside.
