Spicy Stir-Fried Tofu Puffs: A Culinary Guide

Spicy stir-fried tofu puffs (香干) are a beloved dish in Chinese cuisine, loved for their chewy texture and bold flavors. Here’s a simple yet delicious recipe to recreate this at home.

Ingredients:

- 200g firm tofu puffs, cut into thin strips

- 100g pork (optional), thinly sliced

- 2 dried chilies, deseeded and cut into rings

- 3 cloves garlic, minced

- 1 tbsp ginger, grated

- 2 tbsp soy sauce

- 1 tsp oyster sauce

- 1 tsp sugar

- 1 tbsp vegetable oil

- Sesame oil for finishing

Steps:

1. Prep: Soak tofu puffs in warm water for 10 minutes to soften, then drain. If using pork, marinate it with 1 tsp soy sauce and a pinch of pepper.

2. Stir-fry: Heat oil in a wok over high heat. Add garlic, ginger, and dried chilies, stir-frying until fragrant (30 seconds).

3. Cook protein: If using pork, stir-fry until no longer pink, then remove.

4. Tofu magic: Add tofu puffs, stir-frying for 2-3 minutes until edges crisp slightly. Return pork (if used) to the wok.

5. Season: Drizzle in soy sauce, oyster sauce, and sugar. Toss everything evenly, coating the tofu.

6. Finish: Drizzle with sesame oil, garnish with scallions, and serve hot with rice.

Tips: For extra heat, add Sichuan peppercorns or a dash of chili oil. Adjust sauces to taste—less salt if using salted tofu puffs. This versatile dish can also include bell peppers or carrots for color. Enjoy the perfect balance of spicy, savory, and umami!
