How to Make Stir-Fried Bitter Melon with Beef

Stir-fried bitter melon with beef is a nutritious and flavorful dish, balancing the bitterness of melon with the tender texture of beef. Here’s a simple guide to making it.

Ingredients: 300g beef (sliced thin), 1 medium bitter melon (sliced and deseeded), 2 garlic cloves (minced), 1 tbsp oyster sauce, 1 tsp soy sauce, 1/2 tsp sugar, 1 tbsp cornstarch, 2 tbsp cooking oil, salt to taste.

Steps:

1. Prepare the beef: Marinate beef in soy sauce, cornstarch, and 1 tsp oil for 15 minutes to tenderize.

2. Blanch the bitter melon: Soak sliced bitter melon in salted water for 10 minutes to reduce bitterness. Rinse and pat dry.

3. Stir-fry: Heat oil in a wok over high heat. Stir-fry beef for 1-2 minutes until browned; remove and set aside.

4. Cook aromatics: Add garlic to the wok, stir-fry until fragrant. Toss in bitter melon, stir-fry for 3 minutes until slightly softened.

5. Combine: Return beef to the wok. Add oyster sauce, sugar, and a pinch of salt. Stir-fry for 1-2 minutes until well-coated.

Serve hot with steamed rice. The key is to balance flavors—adjust salt or sugar to taste. Enjoy this healthy, delicious dish!
