How to Make Stuffed Tofu Pockets: A Step-by-Step Guide

Stuffed tofu pockets, or "you dou fu cha rou," are a beloved Chinese dish known for their savory flavor and tender texture. Here’s a simple yet delicious way to prepare them.

Ingredients:

- 10-12 oil tofu pockets (firm tofu pockets deep-fried until golden)

- 200g ground pork (or a mix of pork and shrimp)

- 2 tbsp soy sauce

- 1 tsp sesame oil

- 1 minced garlic clove

- 1 tbsp chopped scallions

- 1 tsp sugar

- A pinch of white pepper

Steps:

1. Prepare the filling: In a bowl, mix ground pork with soy sauce, sesame oil, garlic, scallions, sugar, and white pepper. Stir until well combined. Let it marinate for 15 minutes.

2. Stuff the tofu: Gently widen the opening of each tofu pocket. Carefully stuff the marinated filling into the pockets, leaving a little space to expand.

3. Cook: Heat 1 tbsp oil in a pan over medium heat. Place the stuffed tofu pockets seam-side down. Pan-fry for 2-3 minutes until golden.

4. Steam and simmer: Add ½ cup water, cover, and steam for 10 minutes. Uncover, then simmer for another 5 minutes to allow the flavors to meld.
