How to Make Crispy Scallion Pancakes

Crispy scallion pancakes, a beloved Chinese street food, are golden, flaky, and loaded with fragrant scallions. Here’s a simple guide to making them at home.

Ingredients:

- 2 cups all-purpose flour

- ¾ cup warm water

- ½ tsp salt

- 3 tbsp cooking oil

- 6-8 fresh scallions, finely chopped

- Extra oil for frying

Steps:

1. Make the dough: Mix flour and salt in a bowl. Gradually add warm water, kneading into a smooth dough. Let it rest for 30 minutes.

2. Prepare the filling: Chop scallions and set aside.

3. Shape the pancake: Roll the dough into a thin rectangle. Brush with 1 tbsp oil, sprinkle scallions evenly, then roll into a log. Coil the log into a spiral, flatten gently, and roll into a ½-inch thick circle.

4. Cook the pancake: Heat 2 tbsp oil in a pan over medium heat. Place the pancake and cook for 3-4 minutes until golden, then flip and cook the other side. Press gently with a spatula for even crispiness.

5. Serve: Cut into wedges and enjoy hot with soy sauce or chili dip.
