500g fresh prawns (peeled and deveined), 2 tbsp cooking oil, 3 sliced garlic cloves, 1 sliced ginger, 1 chopped green onion, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tsp sugar, 1 cup water or stock, 1 tsp Shaoxing wine (optional), and a pinch of white pepper.

Steps:

1. Prep the Prawns: Rinse prawns and pat dry. Marinate them with 1 tsp light soy sauce and a pinch of white pepper for 10 minutes.

2. Sauté Aromatics: Heat oil in a wok over medium heat. Stir-fry garlic, ginger, and green onion until fragrant (about 30 seconds).
