How to Stir-Fry Pumpkin Shoots: A Simple Guide

Stir-fried pumpkin shoots are a quick, healthy, and delicious dish celebrated for their tender texture and subtle sweetness. Here’s a simple guide to making them at home.

Ingredients: 300g fresh pumpkin shoots (tender tips and leaves), 2 cloves garlic (minced), 1 dried chili (optional), 1 tbsp cooking oil, 1 tsp light soy sauce, ½ tsp salt, a pinch of sugar.

Steps:

1. Prepare the shoots: Trim off the tough ends of the pumpkin shoots. Wash thoroughly and pat dry. Cut into 5-6 cm segments for even cooking.

2. Heat the wok: Place a wok or skillet over high heat. Add oil and swirl to coat. Once hot, toss in minced garlic and dried chili (if using) and stir-fry for 10 seconds until fragrant.

3. Stir-fry the shoots: Add the pumpkin shoots to the wok. Use tongs to toss continuously for 1-2 minutes until they wilt slightly.

4. Season: Drizzle in light soy sauce and sprinkle with salt and sugar. Stir-fry for another 30 seconds until the shoots are tender but still crisp.

5. Serve: Transfer to a plate immediately. The dish pairs perfectly with steamed rice.

Tips: For extra flavor, a dash of sesame oil or oyster sauce can be added before serving. Avoid overcooking to retain the shoots’ vibrant color and crunch. Enjoy this effortless yet flavorful vegetable dish!
