How to Make Russian Sweet Bread (Rusks)

Russian sweet bread, or "Rusks," is a beloved Eastern European treat known for its soft, tender crumb and subtle sweetness. Here’s a simple guide to baking this delightful bread at home.

Ingredients: You’ll need 500g all-purpose flour, 200ml warm milk, 50g sugar, 25g butter (melted), 1 large egg, 2 tsp active dry yeast, 1 tsp vanilla extract, and a pinch of salt. For extra richness, add 2 egg yolks.

Steps:

1. Activate yeast: Dissolve yeast and 1 tsp sugar in warm milk; let sit for 5-10 minutes until frothy.

2. Mix dough: In a large bowl, combine flour, remaining sugar, salt, and yeast mixture. Add eggs, vanilla, and melted butter. Knead for 10 minutes until smooth and elastic.

3. First rise: Place dough in an oiled bowl, cover, and let rise in a warm spot for 1–2 hours until doubled.

4. Shape: Punch down dough, divide into two, and braid or shape into a loaf. Place in a greased pan.

5. Second rise: Cover and let rise for 30 minutes.

6. Bake: Preheat oven to 180°C (350°F). Bake for 25–30 minutes until golden. Brush with melted butter for a glossy finish.
