How to Make Homemade Pork Skin Jelly: A Step-by-Step Guide

Homemade pork skin jelly, a savory and collagen-rich delicacy, is easier to prepare than you think. Here’s a simple guide to achieve a perfect wobbly, flavorful treat.

Ingredients: 500g pork skin (cleaned, fat removed), 5 liters water, 5cm ginger (sliced), 3 green onions (tied), 1 tbsp cooking wine, salt to taste. Optional: star anise, Sichuan peppercorns for extra aroma.

Steps:

1. Clean the pork skin: Scrape off any residual fat and hair with a knife. Rinse thoroughly, then blanch in boiling water for 5 minutes. Remove, cool, and cut into 1cm strips.

2. Pre the skin: Cut strips into small cubes. In a pot, cover with water, add ginger, green onions, and cooking wine. Bring to a boil, then simmer for 10 minutes. Drain and rinse under cold water to remove impurities.

3. Cook the jelly: Return pork skin to a clean pot, add 4 liters of fresh water (or enough to cover), and optional aromatics. Bring to a boil, then reduce heat to a slow simmer. Cook for 2–3 hours until the skin is extremely tender and the liquid thickens slightly.

4. Season and set: Add salt to taste. Strain the broth through a cheesecloth to remove solids. Pour the liquid into a container, let it cool, then refrigerate for at least 4 hours until fully set.
