First, select a fresh, firm bitter melon with a vibrant green color. Wash it thoroughly, then slice it in half lengthwise. Scoop out the seeds and white pith, which are the bitterst parts, using a spoon. Cut the melon into thin half-moons or thicker slices, depending on your preference.

To reduce bitterness, blanch the slices in boiling salted water for 2–3 minutes, then drain and rinse under cold water. Alternatively, sprinkle with a pinch of salt, let it sit for 15 minutes, and squeeze out excess liquid.
