Cold dressed bamboo shoots (凉拌青笋) is a refreshing, crunchy Chinese appetizer perfect for warm days. Here’s a simple recipe to unlock its vibrant flavor and crisp texture.

Ingredients: 1 fresh bamboo shoot (about 300g), 2 garlic cloves (minced), 1 tbsp light soy sauce, 1 tsp vinegar, 1 tsp sesame oil, a pinch of sugar, a pinch of chili flakes (optional), and chopped cilantro for garnish.

Steps:
