Braised tofu skin, or *shuizhu qianzhang* in Chinese, is a beloved dish celebrated for its tender texture and savory flavor. Here’s a simple yet detailed guide to mastering it at home.

Ingredients: 200g dried tofu skin (rehydrated and cut into strips), 200g pork belly (sliced), 50g wood ear mushrooms (soaked and shredded), 3 garlic cloves (minced), 1 ginger slice, 2 dried chilies (optional), 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tsp sugar, 500ml chicken broth, 1 tbsp cooking oil, and scallions for garnish.

Steps:

1. Prep: Soak tofu skin in warm water for 15 minutes until soft, then drain and cut into 5cm strips. Soak wood ear mushrooms until expanded, shred, and blanch briefly.

2. Sear: Heat oil in a pot over medium flame. Sear pork belly until golden, then add garlic, ginger, and chilies (if using) until fragrant.

3. Simmer: Pour in broth, add tofu skin and wood ear mushrooms. Stir in light/dark soy sauce and sugar. Bring to a boil, then reduce heat and simmer for 10-15 minutes until tofu skin absorbs the flavors.
