A Guide to Simple Stir-Fried Chinese Cabbage

Stir-fried Chinese cabbage, or *youcai*, is a quick, nutritious, and versatile dish beloved for its fresh flavor and ease of preparation. Here’s a simple yet delicious recipe to master this home classic.

Ingredients:

- 1 medium Chinese cabbage (about 500g), washed and cut into 2-inch sections

- 2 cloves garlic, minced

- 1 tablespoon cooking oil (vegetable or peanut oil works best)

- 1 teaspoon soy sauce

- ½ teaspoon salt (adjust to taste)

- A pinch of sugar (optional, to balance flavors)

- Optional: ½ teaspoon sesame oil for aroma

Steps:

1. Prep the Cabbage: Rinse the cabbage thoroughly and drain. Cut the stalks and leaves separately for even cooking.

2. Heat the Oil: Heat oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until fragrant (about 10 seconds).

3. Stir-Fry: Add the cabbage stalks first and stir-fry for 1 minute. Then add the leaves, tossing continuously until they wilt (about 2–3 minutes).

4. Season: Drizzle in soy sauce and sprinkle salt (and sugar, if using). Stir well to combine. Cook for another 30 seconds until the cabbage is tender but still crisp.

5. Finish: Turn off the heat. Drizzle with sesame oil if desired, toss once, and serve hot.

Tips: For extra flavor, add a dash of rice vinegar or dried chili flakes. Avoid overcooking to retain the cabbage’s crunch and nutrients. This dish pairs perfectly with steamed rice or as a side to any main course. Enjoy this healthy, 10-minute meal that’s as simple as it is satisfying!
