Tomato is a liver-protecting fruit
Tomatoes are rich in vitamin C, while spinach has a sweet and mild nature, belonging to the liver meridian, and can calm the liver and improve vision. Both are excellent for liver cleansing. The simplest method is to blanch the spinach first to remove most of its oxalic acid, then change the water and cook the tomatoes and spinach together until done. For a slightly more refined approach, sauté the tomatoes first, then add water and simmer for a bit longer. Finally, add the blanched spinach and cook until it boils, then season to taste. The resulting soup is both delicious and nutritious.
