The crabs living in freshwater are small, soft-shell crabs are called "Kuqi, and the larger ones, with hard shells and hair on their feet. Those living in the same family as the hairy crabs are called" Manga ". There are more varieties of seawater crabs."Charbyi" and "cut" are common on daily tables. The shell of charbyi is blue and smooth, and the crab claws are particularly strong. The female charbyi is called red charbyi. In the eyes of Fuzhou people, it is a big tonic and the price is relatively expensive. Male and unmated female charybdis are called charybdis. The meat is tender and sweeter than red charybdis. The price is relatively lower and is more suitable for cooking. Others such as swimming crabs, three-eyed crabs, and flower crabs are called "Che" in Fuzhou people's mouths.
