How to Make Chicken with Rice Sprouts: A Simple Guide

Chicken with rice sprouts (鸡米芽菜) is a popular Sichuan dish loved for its savory, slightly spicy flavor and crunchy texture. Here’s a step-by-step guide to making it at home.

Ingredients:

- 200g chicken breast, diced into small cubes

- 150g rice sprouts (soaked and drained)

- 2-3 dried chili peppers (sliced, adjust to taste)

- 1 tbsp soy sauce, 1 tsp sugar, 1/2 tsp salt

- 2 cloves garlic (minced), 1 tsp ginger (minced)

- 2 tbsp cooking oil, 1 tsp cornstarch (for marinating chicken)

Steps:

1. Marinate the chicken: In a bowl, mix diced chicken with cornstarch, 1 tbsp soy sauce, and a pinch of salt. Let it sit for 15 minutes.

2. Prep veggies: Drain rice sprouts and pat dry. Slice chili peppers, mince garlic and ginger.

3. Stir-fry: Heat oil in a wok over medium-high heat. Add marinated chicken and stir-fry until golden. Remove and set aside.

4. Sauté aromatics: In the same wok, add garlic, ginger, and chili peppers. Stir-fry until fragrant (about 30 seconds).

5. Combine: Add rice sprouts and stir-fry for 1 minute. Return chicken to the wok, add remaining soy sauce and sugar. Toss everything together for 2 minutes until well-coated.

6. Serve: Dish out hot and enjoy with steamed rice!

This dish is quick, versatile, and perfect for busy weeknights. Adjust spices to suit your palate, and feel free to add vegetables like bell peppers or carrots for extra crunch.
