How to Make Dry Cowpea with Pork: A Complete Guide

Dry cowpea with pork is a hearty, savory Chinese dish that tenderizes dried cowpeas with rich, braised pork. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients: 200g dried cowpeas (soaked overnight), 300g pork belly (cut into cubes), 3 garlic cloves, 1 ginger slice, 2 dried chilies, 1 tbsp soy sauce, 1 tbsp cooking wine, 1 tbsp sugar, 500ml water, and a pinch of salt.

Steps:

1. Soak & Blanch: Soak dried cowpeas until soft. Blanch pork cubes in boiling water for 2 minutes to remove impurities; rinse and set aside.

2. Sear Pork: Heat oil in a wok, stir-fry pork until golden brown. Add garlic, ginger, and chilies until fragrant.

3. Braise: Return pork to the wok, add soy sauce, cooking wine, and sugar. Pour in water, bring to a boil, then simmer on low heat for 20 minutes.

4. Cook Cowpeas: Add soaked cowpeas, stir well, and simmer for another 30–40 minutes until both pork and cowpeas are tender. Adjust salt and serve hot.

Tips: For extra flavor, use a clay pot for slow cooking. The dish pairs perfectly with steamed rice, making it a comforting meal for any occasion. Enjoy the blend of smoky pork and earthy cowpeas!
