Glutinous rice pumpkin, a beloved autumn treat, combines the sweetness of pumpkin with the chewy texture of glutinous rice. Here’s a simple guide to making this delicious dish.
First, prepare the ingredients: one small pumpkin, 150g glutinous rice (soaked for 2 hours), 50g sugar, and a few red dates or raisins for extra flavor. Wash the pumpkin thoroughly, cut the top off like a lid, and scoop out the seeds, creating a hollow "bowl."
Next, mix the soaked glutinous rice with sugar and red dates. Stuff this mixture into the pumpkin cavity, packing it loosely. Replace the pumpkin top and place it in a heatproof dish. Add a splash of water to the dish (about 1cm deep) to prevent burning.
Steam the pumpkin over high heat for 40-50 minutes, or until the pumpkin flesh is tender and the rice is cooked. Pierce the pumpkin with a fork to check—if it slides in easily, it’s ready.
Once done, let it cool slightly. Cut the pumpkin into wedges, ensuring each piece has both pumpkin and rice. The natural sweetness of the pumpkin infuses the rice, creating a harmonious, comforting dessert. Enjoy it warm for the best flavor! This dish is not only easy to make but also a delightful way to savor the season’s flavors.
