Dragon fruit cake roll is a vibrant, delicious dessert that combines the unique flavor of dragon fruit with a soft, sponge-like cake. Here’s a simple guide to making it at home.
Ingredients:
- 4 eggs (separated)
- 60g sugar (divided)
- 60g all-purpose flour
- 30g cornstarch
- 50g dragon fruit puree (fresh or frozen)
- 1 tsp vanilla extract
- 200ml heavy cream (whipped)
- Optional: powdered sugar for dusting
Steps:
1. Prepare the Batter: Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper. Separate egg whites and yolks. Beat egg whites until foamy, then gradually add 40g sugar until stiff peaks form. In another bowl, mix egg yolks, 20g sugar, and vanilla extract until pale. Gently fold in dragon fruit puree, then sift in flour and cornstarch. Fold the egg whites into the yolk mixture in three batches, maintaining lightness.
2. Bake: Pour the batter onto the prepared sheet, spreading evenly. Bake for 12-15 minutes until a toothpick comes out clean. Immediately invert onto a clean towel, peel off parchment, and roll tightly with the towel. Let cool completely.
3. Assemble: Unroll the cooled cake, spread whipped cream evenly over the surface, and reroll tightly. Chill for 1 hour. Dust with powdered sugar before slicing.
Tips: For a richer flavor, add a layer of fresh dragon fruit pieces along with the cream. Enjoy this colorful, refreshing treat as a delightful afternoon snack or dessert!
