Start by gathering ingredients: 500g beef chuck (cut into 1-inch cubes), 2 carrots (sliced), 2 potatoes (peeled and cubed), 1 onion (diced), 3 garlic cloves (minced), 4 cups beef broth, 2 tbsp tomato paste, 1 tsp dried thyme, 2 tbsp olive oil, salt, and pepper.

Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides—about 5-7 minutes. Remove beef and set aside. In the same pot, sauté onions and garlic until fragrant (2-3 minutes). Stir in tomato paste and cook for 1 minute.
