How to Make Authentic Guilin Rice Noodles (Lu You Fen)

Guilin rice noodles, or *Lu You Fen*, are a beloved Chinese street food known for their savory broth and tender rice noodles. Here’s a simple guide to crafting this comforting dish at home.

Step 1: Prepare the Broth

The heart of *Lu You Fen* is its rich broth. Simulate pork bones (or chicken) with ginger, garlic, and star anise for 1–2 hours until fragrant. For a vegetarian version, use mushrooms and soy sauce. Season with light soy sauce, a pinch of sugar, and white pepper. For extra depth, add a spoonful of fermented bean paste.

Step 2: Cook the Noodles

Use fresh or dried rice noodles. Soak dried noodles in hot water until soft, then blanch in boiling water for 30 seconds. Drain and set aside. Fresh noodles only need a quick boil.

Step 3: Assemble the Bowl

Place noodles in a bowl. Top with thinly sliced pork (pre-marinated and stir-fried), crispy peanuts, fresh herbs (cilantro, scallions), and pickled bamboo shoots or radishes. Ladle hot broth over the ingredients, ensuring noodles are fully submerged.

Step 4: Customize and Serve

Adjust toppings to your liking: add a soft-boiled egg, wood ear mushrooms, or tofu. For spice, drizzle with chili oil or add fresh chilies. Serve immediately with a side of pickled vegetables.

This versatile dish balances umami, crunch, and warmth, making it a satisfying meal any time of day. Enjoy!
