Ingredients: 500g duck (cut into pieces), 500g winter melon (peeled, cubed), 3 ginger slices, 2 garlic cloves, 1 scallion (chopped), 1 tbsp soy sauce, 1 tbsp cooking wine, 1 tsp sugar, a pinch of salt, and water or broth to cover.
