Braised pork with chestnuts is a beloved dish, celebrated for its tender meat, sweet chestnuts, and rich, savory sauce. Here’s a simple yet delicious recipe to recreate it at home.
Ingredients:
500g pork belly (cut into 2-inch cubes), 20-30 peeled chestnuts (fresh or canned), 3-4 dried shiitake mushrooms (soaked and sliced), 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp sugar, 1 cup water, 2 sliced green onions, and a few slices of ginger.
Steps:
1. Prepare the pork: Blanch pork cubes in boiling water for 3 minutes to remove impurities. Rinse and set aside.
2. Sauté the aromatics: Heat 2 tbsp oil in a pot over medium heat. Stir-fry ginger and green onions until fragrant. Add pork and cook until lightly browned.
3. Simmer the dish: Pour in soy sauce, oyster sauce, and sugar, mixing well. Add water, chestnuts, and shiitake mushrooms. Bring to a boil, then reduce heat to low. Cover and simmer for 40-50 minutes, or until pork is fork-tender.
4. Thicken the sauce (optional): If a thicker sauce is desired, mix 1 tsp cornstarch with 2 tbsp water and stir into the pot. Simmer for 2 more minutes.
5. Serve: Garnish with extra green onions and enjoy hot with rice.
This dish balances the richness of pork with the nutty sweetness of chestnuts, making it a comforting meal for any season. Adjust seasoning to taste and savor the harmonious flavors!
