Stir-fried garlic sprouts with pork liver is a savory, nutrient-packed dish loved for its tender liver and crisp, aromatic greens. Here’s a simple guide to making it perfectly.
Ingredients: 250g fresh pork liver, cleaned and sliced thin; 200g garlic sprouts, cut into 3cm segments; 2 cloves garlic, minced; 1 tbsp soy sauce; 1 tsp Shaoxing wine; 1 tsp starch; 1/2 tsp sugar; salt to taste; 3 tbsp oil.
Steps:
1. Prepare the liver: Soak liver slices in cold water for 15 minutes to remove blood. Drain, then marinate with soy sauce, Shaoxing wine, starch, and a pinch of salt for 10 minutes.
2. Stir-fry the liver: Heat oil in a wok over high heat. Add liver slices and stir-fry for 1–2 minutes until just browned. Remove and set aside.
3. Cook the greens: In the same wok, add minced garlic and stir-fry until fragrant. Toss in garlic sprouts, stir-fry for 1 minute, then add a pinch of sugar and salt.
4. Combine: Return liver to the wok. Mix everything well and cook for another 30 seconds. Serve hot with rice.
Tips: For tender liver, avoid overcooking—stir-fry quickly over high heat. Adjust seasoning to taste, and enjoy the perfect balance of flavors and textures!
